🔹 Total Time: 30 minutes

🔹 Servings: 4

✨ Ingredients

For the Shrimp:

  • 1 lb (450g) large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 tsp paprika
  • Salt & pepper to taste
  • Optional: a pinch of chili flakes for heat

For the Pasta & Sauce:

  • 8 oz (225g) fettuccine, linguine, or pasta of choice
  • 1 tbsp butter (extra, for sauce)
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup pasta water (reserved after boiling)
  • Salt & black pepper to taste
  • Optional: Juice of 1/2 lemon for brightness
  • Optional garnish: fresh parsley or extra Parmesan

🍽️ Instructions

🔸 1. Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Cook pasta according to package directions until al dente.
  • Reserve 1/4 cup pasta water, then drain and set pasta aside.

🔸 2. Sauté the Shrimp

  • In a large skillet, heat olive oil and 1 tbsp butter over medium-high heat.
  • Add minced garlic and cook for 30 seconds until fragrant.
  • Add shrimp, sprinkle with paprika, salt, and pepper.
  • Cook 2–3 minutes per side, or until shrimp are pink and opaque. Remove shrimp from skillet and set aside.

🔸 3. Make the Creamy Sauce

  • In the same skillet, lower heat to medium.
  • Add 1 tbsp butter, then sauté remaining garlic for 30 seconds.
  • Pour in heavy cream and bring to a gentle simmer.
  • Stir in Parmesan cheese until melted and smooth.
  • If sauce is too thick, add a splash of the reserved pasta water to loosen.
  • Add salt, pepper, and lemon juice (if using) to taste.

🔸 4. Combine Everything

  • Toss the cooked pasta into the sauce until well coated.
  • Return the shrimp to the pan and gently mix to combine.
  • Let everything heat together for 1–2 minutes.

🔸 5. Serve & Garnish

  • Plate the pasta, making sure each portion gets plenty of shrimp and sauce.
  • Garnish with chopped fresh parsley, extra Parmesan, and cracked pepper.

💡 Tips & Variations

  • Add veggies: Stir in spinach, cherry tomatoes, or mushrooms for color and nutrition.
  • Make it spicy: Add chili flakes or a splash of hot sauce to the sauce.
  • Lighten it up: Use half-and-half instead of heavy cream (though it won’t be quite as rich).
  • Dairy-free option: Swap heavy cream for coconut milk and use nutritional yeast instead of Parmesan.

🍷 What to Serve With It:

  • Garlic bread or crusty baguette
  • A simple green salad with lemon vinaigrette
  • A glass of white wine like Chardonnay or Pinot Grigio
