Rainbow Sherbet Dessert Recipe

This Rainbow Sherbet is a colorful and fruity frozen dessert that’s simple to make and perfect for hot weather. It’s a fun treat for all ages, with its vibrant layers and refreshing taste.
Ingredients:
- 1 cup orange juice (for the orange layer)
- 1 cup pineapple juice (for the yellow layer)
- 1 cup lime juice (for the green layer)
- 1 cup strawberry puree (for the red layer)
- 1 cup blueberry puree (for the purple layer)
- 1 cup coconut milk (or whole milk, for creaminess)
- 1/2 cup sugar (or to taste)
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- Fresh fruit (optional, for garnish)
Instructions:
- Prepare the Fruit Purees:
- For the strawberry layer, blend fresh or frozen strawberries into a smooth puree.
- For the blueberry layer, blend fresh or frozen blueberries into a smooth puree.
- Mix the Juices:
- In separate bowls, combine the orange juice, pineapple juice, and lime juice. These will create the colorful layers. Add sugar to each juice and stir until it dissolves completely.
- Add the Coconut Milk and Flavoring:
- Add coconut milk to each of the juice mixtures to give it a creamy texture. If you prefer, you can also use whole milk. Add lemon juice and vanilla extract to the orange and pineapple layers to enhance the flavor.
- Layer the Sherbet:
- Choose a large glass dish or several individual cups. Start by adding the strawberry puree to the bottom of your dish for the red layer.
- Next, pour the blueberry puree on top of the strawberry layer for the purple layer.
- Slowly add the orange juice mixture on top, followed by the pineapple juice mixture, and finish with the lime juice layer.
- Be careful when adding each layer. Pour them slowly and gently to avoid mixing the colors.
- Freeze the Sherbet:
- Once all the layers are added, cover the dish with plastic wrap or a lid and freeze for 4-6 hours or overnight until it is firm.
- Serve and Enjoy:
- After freezing, scoop the sherbet into bowls or cones. You can garnish it with fresh fruit like berries or citrus slices for an extra pop of color.
Tips:
- For Extra Creaminess: You can blend in a little yogurt or whipped cream to the juice mixtures before freezing, for a richer texture.
- Color Variations: Feel free to change the fruit juices to create new colors, or use fruit purees for more vibrant layers.
- Make It Alcoholic: If you’re making this for an adult party, you can add a splash of vodka or rum to the juice layers.
