Salmon Cakes

Ingredients:

  • 1 can (14–15 oz) salmon (drained, skin & bones removed if desired)
  • 1/2 cup breadcrumbs (regular or panko)
  • 1/4 cup finely chopped onion (red or white)
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon Dijon mustard (or regular mustard)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 eggs
  • 1 tablespoon lemon juice
  • 2–3 tablespoons oil (for frying – olive, vegetable, or avocado oil)

  1. Prep the Salmon:
    In a large mixing bowl, break the salmon apart with a fork and remove any skin or bones if needed.
  2. Mix It All Together:
    Add breadcrumbs, chopped onion, parsley, mustard, garlic powder, paprika, salt, pepper, eggs, and lemon juice. Mix well until the mixture holds together. (If it’s too wet, add a bit more breadcrumbs.)
  3. Shape the Cakes:
    Form the mixture into 6–8 equal-sized patties, about 1/2 inch thick.
  4. Fry the Cakes:
    Heat oil in a nonstick skillet over medium heat. Cook the patties for 3–4 minutes per side until they are golden brown and crispy.
  5. Serve & Enjoy:
    Serve hot with a squeeze of lemon, a dollop of tartar sauce, or a side salad. They also go great in sandwiches or on top of rice bowls.

  • You can use fresh cooked salmon instead of canned—just flake it and follow the same steps.
